The local shops and agencies is where you want to be unfailingly polite as word will get around real fast if the locals think you’re rude.Very true. Even walking into your local boulangerie everyone says "m'sieur" or "madame" or just simply "Bonjour" as they walk in. They still use the formal "vous" form. In offices hiérarchie is still significant, kinda bureaucratic at times but also polite and systematic in a good way. It can be very alien though.
