Good to know. I've just bought the wife a refurb MacBook Pro for Christmas as she's going back to uni. £2800 for the 2018 15" i9, 16GB RAM, 1TB drive. I've been dreading Christmas morning in case it disintegrates when touched, you've just put me at ease. :)
Personally, I'd see how you go with the on board stuff before investing in the eGPU. All of your uses seemed to revolve around office etc, and your displays are only 2 x HD.
Base 2018 Mac mini with the i7 upgrade (£1069). Then add your own RAM, larger OS SSD/storage drives at your convenience. Plus the option of an eGPU if you ever feel the need in the future.

Those ports will need to be switched. You need to find the central point in the house where all these cables emerge from the walls (check all cupboards and under-stair hidey places etc)

No, but it's a stock OSX app and far superior to Windows image viewer. Again, you don't have to use it purely for photos, it can quite happily hold a vast library of desktop...
