If your pads are to thick you don't get good contact between the heatsink and the gpu die end up with a thick layer of paste which isn't great for temps, pump out is a separate issue the paste escapes then you dont get good thermal transfer.
You might not be stuttering but your hwmonitor screen is indicating your thermal throttling, might be worth while trying ptm7950 just slapped it on my 3070 FE was fed up of repasting due to pump out and my card was still thermal throttling with fresh paste despite my gpu and hotspot temp being...
That was the initial murmurs they now say slightly increased clock speeds ipc increase up to 40% (take with a massive bag of salt), even if its half as good as this still be a decent jump.
Install hwinfo64 have that running while gaming you will be able to see what the temps / fan speeds are like so you get an idea about what improvements can be made.
You wont need the connectors, face plates will come with the sockets this for example Faceplate theres tons of different types single double socket, modular ect.
Shouldn't be crimping anything you need a push down tool to terminate the ends in patch panel/face plate. Never used a tester fairly self evident if its working on not, either doesn't work or only connects at 100mb vs works at 1gb.
