What path did you go down then?
As mentioned the 5800x3D would give you more FPS if you only game.
5900x might not give you the most FPS, but it's NO SLOUCH and it's also an animal for workloads and heavy lifting tasks.
Any upgrade, be it CPU or GPU, I'll always freshen up windows with a format and fresh install. Just to keep things tidy and bin the bloat I've accrued over the months.

In your screen shot you've got fans (aio I presume) only hitting 800-900 RPM. Have you got the fan all in the right mobo headers? Have you any fan curve set up in the BIOS? Do you have the fan headers in a splitter cable or...
Remember to get Chill set up in the suite, always a good thing when you're playing less demanding games to have the monitors max resolution fps and no more, than having hundreds of wasted FPS.

3900x is a good notch down from a 5900x though for gaming. IPC and just newer tech.
Can't say I'm going to jump to 7*** series now. I might when the next comes out and 'll snag myself a good second hand 7900x3D or 7900x from the MM when the "I must have" peoples are all over the new generation...
