Tonight I'm having: Ribs

I don't understand why either. Boiling them is just going to draw the flavour out of the meat and wash away the marinade that you put on. There is no secret to cooking good ribs. Just slow cooking at a low heat and the meat will fall right off the bone - No boiling required.

Maybe it's boiled to reduce the overall cooking time for people who want ribs in a rush, but if that were the case, then why would you cook ribs in the first place? They're not the quickest food to cook, and if they are cooked very quickly, they will be incredibly tough.

Possibly it's to draw out some of the fat, but again, not sure why you'd want to do this. The fat helps to keep the meat tender and moist. Ribs without fat are going to be tough and chewy.

So yeah. Boiling ribs... It's beyond me.

Ribs picked up from Costco and rub used as in OP but with paprika replacing chilli. Will go in the oven soon then I have to start on the sauces.

Went down very well, tasty rub and sauce and ended up putting some of the homemade BBQ sauce on it towards the end.

Ideally I think it would be better to cook more spread out but I only had the one pan that could hold them. They were very succulent but I think next time I'll try to make them more juicy (with sauce) so may try a different recipe.
