The CPU and RAM are very high on the attributes for 3DMark11 but not so much in Firestrike.

This really depends on the game, but yes in general the Q6600 is holding 780 back.
As example on lotro I was hoping for better fps over my last card, after looking at my cpu usage it was maxing out 2 cores and gpu usage was around 40-60%.
On need for speed most wanted, gpu sits around 90-100% so this being gpu bound.
I play on 27inch monitor 2560x1400.
