Cooking with Platypus - Salmon with coriander lime pistou

Sorry no photos, but I cooked this last night and the sauce was amazing, so I thought I'd share.

Ingredients
2 salmon fillets, skin on or off as desired.

Coriander lime pistou
1 cup fresh coriander
1 Lime
2 garlic cloves
1/4 cup olive oil
Large pinch of sea salt flakes

Method
Preheat a grill to 180°C (if you have a fan oven, otherwise just turn the grill on).

Finely chop the coriander and garlic. Zest the lime, and set aside. Place all the ingredients in a mortar and grind together, adding the juice of the lime. If you don't have a pestle & mortar, a bowl and the end of a knife handle works just as well.

Soak the salmon in the sauce, and then place under the grill. Drizzle the sauce over the salmon, grill lightly being careful not to over do the fish. Turn over, and drizzle more sauce over the other side.

Serve with new vegetables (potatoes, peas) as desired.

Do you grow coriander, as 2 cups seems an awful lot :confused:

Really want to try this but unfortunately our herb garden hasn't got coriander in it :(


Might buys some though, is it expensive for that much?

when you say "soak" do you mean just rub it/cover it or marinate it for some time?
 
No its really cheap. Bought the fresh coriander from the grocers for 79p. 2 cups might be a bit too much thinking about it, I'm pretty sure I used less.

As for soaking, what I did was create the pistou and then turn the oven on. So just put the salmon in the bowl and turn it a few times whilst it is heating up - ~few minutes.

This is seriously the best sauce I've ever made for fish. It was amazing.
