Quick answer please.

I am guessing that a 7970 at £430 would give you better performance than what you currently have but I am not 100%.

My first thought would be to sell and get something else

I am hoping the 7970 would be on par framerate wise in BF3 but running ultra.

I can't run ultra with my current cards.

What to do? the chap is pressuring me as I type.

£430 for a single card seems a bit ridiculous really.. I know they are awesome cards but come on.. I'd sell the 5970 & 5870 and pair up a couple of Nvidia cards instead.

What res are you running?

free upgrade, take the money and run - the 7970 will be easier to sell later and still get a decent price but I don't think you'd see that amount on your 5xxx series cards ever again

Really? Buy old tech Nvidia cards when new ones are just around the corner and the current AMD offerings are better? Strange advice.
I would sell and get a 7970 or, if you can wait for Kepler, wait and see what fits your requirements best when they come out.
Of course nobody can give a date that Kepler is due out so you could end up waiting a while.
