Not the definitive guide but the version I made tonight, three cheese :)

You'll need (for 4 people)

4 Chicken breasts (I did three in the pictures)
2 eggs
2 slices of bread turned into breadcrumbs
2 heaped tablespoons of plain flour
1 shallot finely chopped
40g of butter
1 ball of mozzarella
200g of medium cheddar
300ml milk (I used skimmed)
Some salt
50ml Veg oil
Some chips and maybe some salad

Oven at 220c


Method

Butterfly the chicken and flatten with a tenderiser (or rolling pin) Then dip in egg, then breadcrumbs and fry in veg oil until golden.

Add milk, flour and shallot to a pan and whisk. Then add the butter and heat until it thickens to a thick mayo consistency.
Salt to taste and spread over the cooked chicken.

Grate the mozzarella and cheddar then sprinkle over chicken and sauce. Grate the parmesan over the top and stick in the
oven until the cheese just starts to brown. Serve with chips And salad.
