I went for 2 modules for future expansion purposes.
8x4GB sticks would be 32GB max. 8x8GB would be 64GB which is the max supported by most boards.

Not that I'm even gonna need that much RAM

Is the 5820k fully overclockable or does it switch to one core when overclocked? It sounds mad but im sure i heard a review say that.

Fully overclockable. Not sure where you heard that. Doubt Intel would sell many at all if that was the case.
