Can this be achieved with my current system by swapping out the GPU only?

The idea is I'll build a new system after summer and then put the new GPU into that, I understand it will be bottle necked for a couple of months beforehand but if I get 1080P at over 60FPS then that's fine

Another option is buy a new GPU to "tide" me over until I build a new system and then buy a more powerful GPU but that seems a bit daft, yet another option would be to just stay as I am but I've had a 120HZ monitor for a while now and my current system is letting it down...

For raw FPS a GPU upgrade is always best, the CPU may be a limiting factor and it depends on the type of games you play - but since you're upgrading that too then I'd go GPU first then mobo/cpu and ram if needed :)
 
That CPU is ok and should not bottleneck a top tier card. The problem being is, games of late are very demanding even at 1080P and maintaining 60fps+ is a biggish ask in certain titles like Crysis3/Hitman Absolution/Tomb Raider with highest settings. Of course if you are happy to notch down AA a little, you should be good to go.
 
To find out the FPS limit of that CPU go into the games you wish to play, turn everything on the lowest settings and use a very low resolution, that should give an idea as to how CPU limited you would be.

What's the logic behind this surely if everything is set to rock bottom then it will have no problems running it at very high FPS, I'm not doubting I just don't understand?

The idea is with the GPU having to do little work the only thing that could be limiting frames is the CPU/other components (unless the game is limiting frames via sync or some internal limitation).

So if at lowest settings it can reach 200 FPS, then you -should- be able to add GPU grunt to power 200 FPS with settings on max (of course that might require a lot of GPU grunt, but you get the idea).
