I'd like to have a crack at undervolting my Gigabyte AORUS 1080ti. However, I'm not exactly sure how the voltage curve works on MSI afterburner. I've googled and found a bunch of people talking about it, but no one actually explains it properly. I'd really appreciate either a link to a good guide or if someone could explain it.

Sorry, I forgot to thank you for the guide. It's still a work in progress, my first attempts proved, ultimately, unstable. However, I'm closing in, most likely going to be similar to what you have.
Yeah, realistically I'm aiming to sustain 1974 without dropping. I often can, but on some more demanding games it can drop to 1949.
