1080TI, will it fit?

I still have a 2500k rig with a 1080 as my 'spare'. I'd honestly not bother upgrading for as long as possible as for the most part, everything is still pretty well balanced in most applications. However, you didn't say what boot drive you have (I see a lot of SATA cables though). If you don't have an SSD as your boot drive then get it sorted immediately. It's the most noticeable upgrade you'll ever make. I know the Z77 boards supported SSD as boot drives natively, and I think Z68's like yours did after a BIOS update, but good to check....

I should have mentioned that I have an SSD for the OS, an SSD for my games and a 500gb HDD for my media, etc :)
