Was just checking my vid settings on my 360, at the mo its one setting below the max allowed. Just now i flicked it up to 1920x1080 and hit apply and for some reason its displaying it, it looks brighter than the lower setting but seems to be displaying that res. Im assuming its just squishing the image down though?

It's not squishing it at all, it's cropping a few pixels (120 from each side, 15 from the top and bottom) from around the edges.
As for the over-brightness, that's down to the differences between video level and PC level. Video level sets black as 16 and white as 239, as opposed to PC level which is 0-255. You get the same problem with 1280x720. I'm not sure if it's the 360 that switches to video level, or the 2005 that doesn't detect it at those resolutions, but, the result is the same.
