2 monitor setup

I'm thinking about getting a second monitor for my simrig, that will only be plugged in when using simrig.

That means two cables will be plugged into the graphics card but only one monitor, for general use. My question is, will the computer think two monitors are being used if two cables are plugged in, even if only one monitor is plugged in?

Yes, but it's quite easy to use WinKey+P and switch between Primary Only, Secondary Only and Extend, which disables the unused monitor.
