Well would 2 of these be worth It over my current 4890 which is gaming at 1680 x1050?

Also thinking about getting a new 24" monitor so I'll be gaming at a higher resolution. My motherboard does 16x pcie and 8 x pcie in crossfire any big performance hit with this? Should I just get a single card?

I'm also thinking about this Eyefinity thing maybe 3 22" monitors how does that work then?

2 X 5770 pretty much equals 5870. So would you take a 5870 over your 4890. Two 5770's can be had for approx. £223 (elsewhere). Cheapest 5870 I've seen is £295.:)
 
im pretty sure you board would turn the x16 slot into an x8 slot for CF, but 8x/8x shouldn't be any bottleneck for these cards.

and eyefinity? just plug 3 monitors into the back of one of the cards (cant use the outputs from both cards at the same time), and go wow.*

each card comes with 2 DVI, 1 HDMI and 2 display port and it can output on three of them at once.

*steps may be missing...
