I have an older AM4 system I am just upgrading from an 1800x to a 5600x, it is currently using a 2070 and was wondering how much of a leap will a 6800xt be at 1440?

It seems from what I read it is quite a big leap.

60%+ uplift depending on the game in traditional raster rendered games.

Although Ray Tracing performance on the 6800XT is weak and not much better than the 2070.

Ray tracing is not something I ever use at the moment anyway as I find the 2070 needs settings turned down to run 1440 well.

Ordered one earlier. Currently my 2070 is running on a single psu cable that splits to the two connectors. Is it better to run the 6800xt on two separate cables?

A 6800XT should be a big upgrade from 2070. Use two separate cables if you can. You should also make sure your PSU is up for it, A good quality 650W+.
