Would a 6970 2GB run BF3 on 3 monitors fine?

You would have to lower the settings a lot to maintain any sort of playable framerate. What res are the monitors?

5760x1080 total, 1920x1080 per.

Also what you think about MW3 @ 5760x1080 on 1GB/2GB ram think it'd be acceptable?

i ran the beta for a bit on 5760x1080 on medium settings. was getting about 40 to 50 fps on 2 6850's if that helps

Pretty sure you will have to lower the graphic details to something like medium.

Simple answer no not really, you need 2 and you are then looking at mid/high.
