I was thinking about picking up a cheap PS4 and RDR2 for a bit of a play over Christmas.

I can pretend it's for the kids!

Can anyone advise on the different hardware versions and what is the best bang-for-buck?

If you have a 4K TV and can afford it, get the Pro - the earlier versions have louder fans, but there's no way to check which you have - unless you are able to check the chassis/model number or crack it open to look at the style of the fan. A quick Google will offer up the info you need.

Depending on where you're buying it from, you probably want to see it working etc as well.

No 4k TV here - just an old HD Sony with a small hole in the screen from what looks like a compass - probably thrown by one of our mini-satans lovely boys.

Not overly worried about fan noise or marginal performance differences, and it's unlikely we'll be playing many different games in any given month.

If its just a 1080p TV then I would just see if there are any second hand standard/slim ones on MM. Or... If you have a decent PC then buy it for that, hopefully they should fix a decent amount of the problems before xmas.

So ps4 original (also called fat :) ), ps4 slim and ps4 pro are the options.
The fat is the first one that got released, and when the pro released they made the slim which is the standard one in a slim format.

In your case i would get a used ps4 fat or a good priced slim. I would consider the pro only if I was getting a 4k tv at some point.
