I want to install Mint onto a 2nd hard drive but dont want to mess up the MBR on my windows 7 system. Would the easist way to do this be to unplug my Windows 7 HDD and install Mint onto the 2nd drive?

I believe I would then choose the operating system by going into the BIOS, is this correct?

Anyone know? I dont want GRUB installed on my Windows 7 Hard drive.

Yes you can. You don't have to unplug providing you know what you are doing as you choose where the boot loader is installed, I.e. to /dev/sad or /dev/sdb ... Etc... once mint is installed, if you've unplugged, attach win7 again, boot into Linux and boot mint. Run grub so-prober and it should generate the grub menu including windows 7 in the menu.

But really, providing you can identify the hdd when in mint you can choose to install the boot loader (grub) to the disk you desire.
