Right people which do you reckon will give best performance : a single gtx 580 or 2 560 in sli? or is there any benchmarks floating around showing this

Im considering this issue too.

I know that SLI 560's give higher FPS than a single 580 but I have 2 questions about this?

1) Does the fact that each 560Ti only has 1Gb of ram limit its future useability as more demanding games come out....I know that having 2 in SLI means you have 2Gb of combined VRAM but do games use this as effectively as one card with 1.5GB???

2) Are potential issues with SLI enough of a reason to get a single 580 instead???

Theres virtually no difference between 16x16 and 8x8.

i heard there only a marginal difference, however its still bugs me when trying to decide what route to go down regarding a system build, do i spend aother £100-£200 for maybe 5%-10% more performance

depends what res you play at, up to 1920 and you should be more better off with the 560's in sli, again i think sli wont be a problem, it is early days for the new drivers but things can only get better.
