I'm looking at buying 8Gb of DDR3 to go with a PhenomII x6.

I noticed the single 4Gb sticks of Corsair XMS3 are C7 and the 8Gb Dual Kit (2x4Gb) is C9

Surely buying two of the single C7 is the best bet?

(I'm also assuming its better to have 2x4Gb than 4x2Gb?)

You probably have seen different models. Kit is a kit and contains two the same sticks among different models.
There's no real difference between single and dual channel in gaming. In benchmarks you've got difference as memory bandwidth is as much as twice in case of dual channel. In some graphic software that operates on big memory blocks you might notice some difference, but in total summary it shouldn't be *really* big.
If I were you, I'd get one 4 GB stick with CL7 and placed second same one (CL7) in the future, when more memory would be needed.

The only difference is that the set of two sticks have matching SPD's. Which will make it easier when you stabilise your ram. Single sticks may have different SPD settings.
