well, you can do it with sli but dont but it in sli mode or you can do what am doing 1 gfx which can support 2 screens and a pci gfx for the 3rd screen
I'm running three atm also, Nvidia 8800gtx running main panel and ATI X600 running 2 x panels either side, can be a bit of a nack sometimes getting them to work together, I used to run a 6200 with my 8800gtx but allways gave me problems when updating the drivers, try going for a working combination like I or some of the other posters have reccomended .
Alternatively - you can use onboard graphics if you have it. I used to have a Nvidia based mobo which had a 6100 built in - ran that alongside my 7800GTX giving me 3 monitors.
