£300 - £350 Upgrade itch

Currently running a tidy little system and having the hard force of an upgrade itch bearing on my shoulders :D. I am looking at a new processor and the i5 Sandybridge 2500k looks right down my street (currently AMD though) as well as that I will ned a new Motherboard and I am thinking of a graphics card too. Bare in mind I can sell my current processor, motherboard and graphics card for some extra funds this will also bring in the possibilty of a psu needed.

Specs:-

AMD Athlon II x4 Quad Core 640 - 3.00Ghz Processor
MSI 870-C45 Socket 770 AM3 Motherboard
Sapphire HD 5830 "Xtreme" Graphics Card
Corsair XMS3 8GB RAM
Elite 500w Powersupply
Arctic Cooling Freezer 7 Pro Cooler
Seagate 500gb 7200rpm 16mb HDD
Western Digital 320gb 7200rpm HDD

Just a little edit - I use my computer primarly for video editting and also playing games.

Option one would be
Drop in a 2 gig 6950 gfx card, a new 955 CPU, and get a decent PSU like an Antec Truepower or the like, sell CPU, cheapest and easiest option

Option two would be
2 gig 6950, PSU plus 2500K, Z68 mobo sell current board and CPU, bit more hassle, and may push you over budget, depending on what you could get for your board/cpu
 
Even though option one is cheaper and a bit more efficent it doesn't quite reach my demands. A 2GB 6950 sounds nice but how about a Nvidia alternative maybe a 560ti.
