Really everything you could ever need to know about the camera or how to operate it is in the manual.
However, there is no substitute for hands-on experience and I would suggest that as soon as she knows how aperture, shutter speed and ISO (wikipedia will do you nicely for this, though it's all in the manual anyway) effect exposure and depth of field, then she should just get out there and have a go. If in doubt, take a shot on fully automatic, see what settings it used (view a photo in-camera and press the info button) and try to figure out why they were appropriate in the situation.
