360 PSU's

Can you use any 360 phat power supply with other models? I.e I have an old elite supply I want to use with a falcon

You can use an older PSU with a newer revision of the original shape, but not with a 360 S or E model as the connector is different. You also can't use a newer PSU with an older revision/model.
