May I ask, will this behave exactly like a single card or will it simply be crossfire in one card, like the 7950GX2?

it should behave as one card, unlike nvidias GX2 models which are 2 cards glued together with bostick and shoved in a single socket.

Be great if it did behave as one card but we all know it wont as it's dependent on crossfire support from drivers and to a smaller extent from games too.

How do we all know? nobody's tested it yet. Crossfire itself is reliant on drivers, but this is a single card solution.

if it wasnt in crossfire, and was just 1 'card' as it were, why the need for 2 sets of ram? makes me think its going to be seen as a crossfire card imo

No one on earth knows what this card will operate like yes but you would think ATi would add 2+2 together and discover if they do this they are going to make themselves a lot of money ^_^. It must be possible.
