3900x or 5900x for gaming only?

I went for it myself, 8-core was the minimum for futureproofing this console generation, and it was less than £100 to step up to the 12-core.

Depends on the games you play, I've perceived some significant improvements to the CPU-intensive games I play at 1440p 165hz (space sims and turn based strategy)

im also currently using a 3900x for gaming, but i dont overclock, looking at the 5950x, but its base clock is 3.4 compared to 3.8 base clock on my 3900x, does the 5950x with the lower base clock still be better gaming wise than the 3.8 base clock of the 3900x ? sorry i dont know tech.

or would it be going for the 5900x with a base clock of 3.7 ?

Probably with IPC increases. But it's unlikely you'll perceive a difference between those two if you're only gaming. I would skip this generation if I were in your shoes

Supply issues aside, is the 5900x overkill for gaming, or justified over a cheaper used 3900x?

Will be paired with a RTX 3080

Thanks
I used 3600XT/3800XT/5800X with RTX 3080 for 4K PC gaming. There is no FPS difference in any of them ,I even run my 5800X at CPU clocks up to 5000Mhz and still no difference. If you like big numbers 5900X,if you just want to PC game @ 4K I assume with RTX 3080 than any CPU really.

Had a look to see if there are any 4k benchmark comparisons with the same game across the different Zen 3 CPUs and its not easy to find. Most benchmarks seem to be at 1080, where it looks like you get about a 10fps improvement tops between the 5600x and the 5900x, so at 4k you are probably looking at a few fps of an improvement, which you are unlikely to notice.

As far as I can tell, the extra money spent on a 5900x will only benefit you if you are also using your PC with productivity applications.

My plan is to get the 5600X now and then maybe upgrade to the 5800X or 5900X a couple of years down the line. I reckon the 5900X should be sub £350 by then which makes the total investment around £650 minus whatever the 5600X can be sold for. Or I might upgrade to a next gen cpu if it is a major boost.
