3x 5870s??

2 SLI and 2 crossfire pretty much work flawless now.

When you start getting into 3 and 4 problems tend to arise. Ie you start getting negative performance and heat / psu limitations driver limitations / driver buggs etc.

Personally. I would stay away. 2x5870 is faster than any single GFX out there. It will be faster than 580gtx and 6970 and it will stay that way till the end of 2011.
 
Or you can either sell your two 5870 now on MM, and wait for the 6950. Assuming the 6950 are around £250-280 you can get two of them. From what l remember Crossfire with three cards doesn't scale so well when you add a third card. That will depend on the game you play as well as the drivers you currently have.

The 6850 & 6870 offer a better Crossfire performance increase than the 5800 but that is limited to two cards at the moment. Crossfire with three or four cards will probably be available on the 6950 & 6970 but two 6950 will offer a good performance increase over the two 5870 you currently have; it will probably consume a great deal less power than three 5870 and generate less heat.
