if you go SLi then the new single card will catch up, that is providing the new card is at least 80 percent quicker than a GTX or ULTRA.
Cards like that may not be around for another 4-5 months at least.
if you want screaming fast framerates get either 8800 GT 512 SLi or GTS 512 SLi. Cheaper than GTX SLi and just slightly behind.
All in all depends what ** gonna play to take advantage of it
