Looking at the great prices for some of these cards now, is there any point getting one for gaming using only a single monitor?
(A 32" TV but still...)

Unless you are thinking you might upgrade your monitor and/or want to SLI in the future then no.

4GB is not needed but 2GB can be exceeded in some games especially those that allow heavy modding.

I find X-Plane 10 regularly uses 2.5GB of VRAM but this is with ultra textures which can be lowered to bring the usage under 2GB.

3GB will become more popular in the next two years but 2GB is still plenty for the time being.

If you plan to sli 4gb..... because sli essentially makes the pc think its 2 gpu's but 1 pool of video ram (everything is duplicated across both boards).... and when you wack up the vid res and max AA levels, the gpu grunt is there from the 2, but 2gb v ram isn't enough for silly high AA and res (if U go higher res in future)
