first one otherwise it should be 4lb peeled apples etc
Depends on how much you trust the recipe's author and the way the rest of it was worded, but I'd take that as being 4lbs of apples that were then peeled and cored.
Very unusual to see ingredient amounts specified after they've been prepared, unless you're talking volumes - 1 cup of finely diced onions, as an example.
