5 Ghz channels

I use the most recent model of Apple Airport Time capsule 2TB AC router .

Although all of my network drives are connected via ethernet i only use my MacBook Pro via the 5Ghz wifi channel. Mostly this works well enough for large file transfers when i'll see transfer rates of 50-70Mbps

Occasionally i find this will sometimes be much lower for periods of time so ive been looking at the wifi setup to determine im getting the best use.

If i open wireless diagnostics and do a scan of the surrounding networks it tells me the best 5ghz channel to use is 161.

It also tells me I'm currently on channel 36 - which looks quite popular with the neighbours however ive also seen it on channel 100 before.

However when i go into Airport Utility the 5GHz channel is currently on Automatic. But I can only choose channels 35, 40, 44 and 48.

Why am i limited to being able to choose these channels when ive seen my router use channel 100 before and diagnostics is telling me 161 is the best channel to use?
 
Ok, please bear with me because a lot of this is well outside my area of understanding.

But why have i seen the router using channel 100 before in automatic mode and this is not a manually selectable channel?
 
It wouldn't be dynamic frequency selection if it let you select a specific channel would it?
