5 series 2004-2008, any differences?

Right, a clown i know has picked up a 2004 525d on a private plate and is telling the world that it's a 2008 model and it cost him 16k.

Are there any styling or trim changes that i can "spot" and point out to him that he's either a) lying through his teeth or b) a gullible prat who has been ripped off for several thousand pounds? (i'm wondering which one he'd rather "admit" to ;);))

The easiest way to spot the difference if its an auto is the joystick style gear selector on the 2007 onwards cars. The auotmatic dual zone airconditioning was standard on earlier models either and pretty rare unless it was a good spec and the iDrive controller was all metal on the earlier cars where the facelift has leather trim on it.

I've got an 06 plate with a leather topped iDrive controller, so I wouldn't take that as verbatim.

Doesn't the 07 onwards iDrive have shortcut keys for Nev, CD, FM etc either around the iDrive controler or below the CD player? (see them in the pictures).

Yes it does there are loads of differences but if the car hasnt been modded they are pretty easy ones. Your iDrive controller knob has been changed if its leather trimmed.
 
It gets a whole lot easier than looking at the gear stick. Look at the door cards. LCI is a completely different design to pre LCI which has an angled handle. LCI is a slopeing arm. Dandles pics above tell the story.

No, it doesn't. 07/57 is just a menu button as per the pic above. 08 onwards gets a new system with shortcut buttons and a completely revised iDrive which has 3d Sat Nav (for one).
 
Will it not have the car registration date on the V5?

So what are the Buttons below the CD player on the image above, that aren't in the pre-LCI image?
 
Did the 5 series orignally have front and rear parking sensors as standard on the 04 models? I know its standard for the last few years, not sure about when that version first appeared.

He is right to a point. The 07 onwards cars did move to the third generation iDrive which although not changing the buttons around the iDrive controller added the assignable shortcut buttons under the DVD drive on the dash and improved the speed and layout. The newest iDrive is the fourth generation with the new iDrive controller and is a hard disk based system although some cars have the latest cotroller but the old DVD drive.
