Sell the cooler to make money back, or use it! It's not amazing, but should suffice. You'd have a backup if one fails

Yeah I wouldn't go with a H61 mobo with this sort of build.

OP - Your original spec would be fine, although I'd change the case and the PSU to the CX500M.

As you said yourself, future proofing. Plus the 'M' version because it's modular.

Nope, the card will work fine with the PSU and Motherboard.
