Looking to upgrade my system I currently have i5 6600K @4.2GHz, 3200 32GB DDR 4

I don't mind swapping out my motherboard but not sure with AMD what cpu should I get

The 5600X looks good but not if I should get something better?

It is a decent upgrade, but I'd try to either get the 5700X3D, or move onto AM5, since that will offer you more future upgrades and likely better expansion with M.2 slots, newer PCI-E spec, USB ports 'n such.

My son will have my current cpu/mobo so I would need to buy a new one.

My budget I thought I would need £400 but I think I can do a decent upgrade for much less?

Thank you.

Yeah you can do, what items are you planning on transferring, assume the ram will be transferred to the new CPU and motherboard?
