5760x1080 - SLI 780ti, 980ti or better CPU with existing 780ti?

I'm currently running 5760x1080 with a single 3Gb 780ti which I bought second hand for £90, I'm tempted to get a second and go SLI as I had no problems with my previous SLI 580's and my case looks odd with a big hole where my second card used to be.

I'm undecided though, the 780 is great after the 580's (which tbh coped just fine with a little tweaking of settings at this resolution) I'm thinking of SLI again but wondering if I should just sell my existing 780ti and get a 980ti for around £250.

I play GTA V (which I have to lower texture settings due to VRAM) BF 3 & 4 which both run at ultra but no AA beautifully, FSX which again runs beautifully and Project Cars.

Thing is though, I'm still using an i7 870 (3.8 O/C) and am assuming this is largely going to bottleneck either SLI 780ti's or a 980ti and thus I'm pondering if a replacement board and better CPU (used from the MM) would be a better option in the meanwhile, currently as I say, my 780ti suits my needs beautifully with the exception of GTA V which I'd like to run with better textures but can't.

What would you do?

You won't be bottlenecking a single 980Ti with an old i7 at 3.8GHz, especially with a higher resolution than normal. You're pushing more pixels than 3440 x 1440 and only a few million shy of 2160p

You will benefit so much more from extra GPU grunt and a faster CPU will give negligible returns in comparison. 980Ti is the best shout if you can find one at a cracking £250. 3GB cards at your resolution is a bad idea imo.
