what you have to remember is programmes like this stress your gpu beyond what a game would so it's not a very good judge when wanting to know everyday temps.
basically monitor your temps whilst playing an intensive game for an hour or two then come back with some numbers.

My 5870 is the same it wont go up or down on auto.

My 5850 hits 80 ish during Modern Warfare 2 and the fan never increases much above 33% on auto. Seems that the fan control isn't that great.
Yeah Kombustor/Furmark will really heat things up.
80C is not too bad on the core, but the problem is that the vddc's could be 10-15C above that. I have read that you want to keep those under 100C for sure.
You can use Afterburner to make a custom fan profile. I make it so that my core doesn't go above 70C, but since I run at 1.175V for 900/1300. My fan is set to ramp up quickly 40% at 60C, 55% at 65C, 75% at 70C.
