I have the 5900x with a MSI RTX 3060 VENTUS 3X, basically I don't use it to it's potential, so was looking at maybe, utilising the AM4 motherboard and swapping the CPU for the 5700G, it'll be less power hungry, Is this doable or even recommended. Any help appreciated.

If you're going to make that switch I'd get a 5700X3D (for gaming) or a 5700X. The 5700G has half the cache compared to the 5700X and is limited to PCI-E 3 as stated. The 5700G would only make sense if you want to remove the 3060 from your PC, but I can't imagine that you do.

The 5700G is more efficient than the 5900X when lightly threaded, but the difference isn't huge since the 5900X doesn't unnecessarily run full pelt 24/7.

If you want a simulation of the differences, disable one of the CCDs (giving you 6 cores) and monitor power usage via hwinfo's sensor tab.
