64bit CPUs have been around for quite a while now, Dual Cores slightly less, but what portion of software on the market at the moment has been optimised for these architechtures?

Not a lot. Speaking about games only i know Farcry/Source are 64 bit. And source is getting a multicore update soon (probably when Ep2 hits). Other games with multicore support are Oblivion, SupCom, Quake 4 (with patch). And a few more which I cannot remember at the minute.

Seems a shame really.

The Ghz race meant a direct impact on performance out of the box. With these new architectures, how long is it going to take software developers to take avantage of them across the board?

Quad core cpus will probably be widespread before software is available for even single core 64bit. :(

tends to be games/encoding&decoding/compression&decompression software that get optimised for it

ie, winrar + 7zip are, so is virtualdub + xvid

Graphics apps are usually multithreaded, like 3dsmax's mental ray, photoshop etc

Yeah. Dual cores haven't been around long true, but dual processors have been around for a lot longer and these types of programmes have been optimised for them already.
