I'm looking to buy 8GB RAM soon.

I noticed you can get 8500 RAM with the same timings as most 2x2GB 6400 kits (5-5-5-15).

Looking at it from a non-overclocking point of view, would I notice a speed increase with 8500 RAM over 6400 RAM?

Craig.

Pointless imo, what are doing? If your running virtual machine or something and assigning memory to machines then it makes sense.

nope, I would only go for the 8500 if i was overclocking

PC2-6400 RAM should be plentiful enough if you are not overclocking, so save your money there. Although with some of the current offers at the moment for PC2-8500 RAM and with not a huge difference in price, you could go for them although it will be a waste if you are not overclocking.
