6600K Where to go?

Would there be any benefit of Z590 with a 11400?

Maybe you could tune the cache ratio, not sure.
Could stick in a K cpu in the future.

I considered an Asus board with the cashback promo, but couldn't justify the extra cost compared to B560/H570. Plus the added faff.

intel 10400/11400 paired with a B560 board is all most people need, anyone looking at getting a new CPU, please look @ 1440p/4k benchmarks before you make your final decision. Also overclocking imo just isn't worth the extra cost today, you end up spending an extra 40% to gain maybe 5% in performance, chips do most the work themselves these days, gone are the days of overclocking an E8400 to 4.2Ghz!

You can grab a 11400 with a B560 m/b, whack in 3080, and @ 1440p and above you will be matching the big boys that have spent twice as much as you.

Would there be any benefit of Z590 with a 11400?
Not unless you need the extra features, B560 comes with memory overclocking and lets you play with the p1 p2 limits to boost the 11400 power so it will almost match a stock 11600k.

The Z590 won't give you any extra performance with that chip but will benefit if you upgrade to a K chip in the future but doing so is not really worthwhile as you still won't gain that much extra gaming performance.
