Why do you need 2 cards? Unless you're getting an eyefinity setup (you won't for the money you're suggesting) you will max out any game with a singe good card.
This will then leave you the opportunity to pick up another later on when the games get more demanding...

I would suggest:
Overclockers Brand GTX580 389GBP

And:

Ilyama 27" monitor...

Right, so the 480...what does it lack over the 500 series NVIDIA range? The price is good, but I'm worried about not getting the latest MSAA tech like used for dead space two to cure jagged edges. Even the price is great a single 480 vs 570, the 570 has the overall advantage...so I'd imagine this would also be the case in SLI.

the only real disadvantage with the 480's is they are quite hot and noisy, especially 2 of them running in sli...
I think the 5 series (as is usually the case with new cards) will have more support for the newer titles coming out, this will be in terms of better tesselation from the 580. They both support dx11 etc so there will be limited differences.
The 580 simply does things faster than the 480

flip it, Heads for the first, Tails for the second.

I'd get the cheaper monitor and the better cards. Unless you're investing in an IPS monitor I'd just get the cheapest thing that will display a picture! :D
