In case anyone comes across the same issue, the latest AMD Adrenalin Drivers seem to dislike Virtual Displays...

Just booted up, motherboard post screen showed, then the monitor powered down due to no signal.
Tried jiggling the DP cable to no effect, so I swapped it out for brand new (known working), but still no display.
Restarted, same issue (Post display, but nothing from Windows).
Forced boot into Safe Mode (+Networking), which displayed like normal, checked Windows Updates and ran DDU.

Tried restarting again normally, but same issue.

Safe Mode again and I checked Display settings - My monitor (Dell G3223D) was set as No. 2 and "main" was the Virtual IDD that is used by Sunshine Host (For Moonlight streaming).

Uninstalled Sunshine, restarted into safe mode and updated AMD Adrenalin drivers (25.2.1).

Rebooted and everything is back to normal:

Reinstalled Sunshine (AIO Tool with Virtual Display).

Main Display 1 = Dell G3223D 1440p 165hz
Display 2 = TCL 75C845K 2160p 144hz (My lounge TV)
Display 3 = IDD Virtual Display - Resolution set by Moonlight (depending on whichever device I'm streaming to) @120hz
