Recently upgraded to an 8350 and added a Matternhorn Pure cooler today. Been running the AMD Catalyst overdrive tool to get a quick idea of how its all performing while running HWinfo to monitor temps etc. This managed to edge frequency up from 4GHz to 4.6GHz before it locked up at 4.7GHz (n.b. this just increased multiplier - everything else like voltages etc left at stock - just doing this a a quick idea of how everything is performing)

In HWInfo there are 2 CPU temps reported a CPU0/CPU 0 Package value under the CPU section which reached ~53-55C at 4.6Hz and then CPU value under the ITE IT8720F section which is always higher and reached 69 at same point.

Which of these is the "most correct" value and what should I consider to be the limit for the temps?

I'm not sure if I'm honest though I find that temperatures are easier to read on HWMoinitor. I would guess that the two temperatures you are seeing are the package/socket temperatures. Generally, the package (CPU) runs cooler than the socket. Socket temperatures are normally suggested to stay at 62C or lower, though there is no official information backing it up.
