Thinking of picking up a GTX 970 in the sale. Currently using a pair of ATI 6850s to run a triple monitor setup. Question is, will a 970 outperform a pair of 6850s? I'm betting the answer is a resounding yes, but I want to be sure before I drop a quarter of a grand on it.

A resounding yes.
A quick comparison with a 6990 which is effectively 2x 6970's so even faster than your current setup.
