I seen that some people on the forums have put builds up with 9900K and 4200mhz speed ddr4 memory etc but I was under the impression that the 9900K only uses 2666mhz? or am I missing something here.

Exactly this, most cpu's only support that speed but work fine with the ram overclocked to higher speeds

Yep, the chipsets only officially support 2666 if you look at the Z270 or Z370 specs. However, board manufacturers will test and rate their boards for clock speeds much higher than that, often in excess of 4000 MHz. Look at the specs for a particular motherboard to see how fast you should be able to run DDR4 on it.
