Looking to get a piece of acrylic cut to size to show the full inside of a case (and replace the side of the case entirely), what kind of thickness should I be looking at looking at getting?

Also, what do you think to a few bits of velcro for an easy way to fix it to the case?

yup most are 3mm.

on the Velcro idea, not so sure. if you intend to affix Velcro to the back of the side panel and the front of the acrylic then you will end up with a gap.

I would go with small flat headed bolts are similar.

On that note, I have a 3mm or 4mm piece of uncut acrylic (not sure which) in the garage which I bought encase my 1st panel was a mess after I cut it for my 600T.

You're welcome to it! Will have to check the MM rules on selling it, but its yours for postage.

3mm, Velcro isn't the best idea you will have a gap, when I made my own window panel for a case a few years ago I used a glue like no more nails to glue it in place and it worked, didn't need to use screws, but be carefull you don't apply too much or when you press it against the side panel it will spread out and onto parts of the window you don't want it to go on

I used silicon sealer, which worked perfectly. Took a few days to try 100%, but it was solid with no movement. Dead cheap from B&Q too!
