Right, say if i have a .pdf file that i open in Adobe Acrobat 7.0, is there any way i can edit the existing text that is on the page? Iv had a little play about and the only thing i can do is add comments to the text, not change the text.

If even had ago at creating my own but cant seem to get my head around it..

if this cannot be done is there anyway to convert it to a text doc? then edit the text then convert back to .pdf?

The free version of Adobe Acrobat only lets you open pdf files. If you want to edit them you'd need the paid version. Even then if the pdf is locked then I think you can't edit it.

As for converting to text and then back to pdf, you could copy the text out of the pdf using the the tool in the free Adobe Acrobat, paste it into Word and then into OpenOffice to save as pdf, or just skip using Word.
