I've noticed lots of talk on modular PSUs, I've also noticed they cost quite a bit more.

Is there any real advantage to using these over conventional ones?

They allow you to only plug in the cables you want to use, thus supposedly saving space. But if you have a reasonably large case anyway, you can easily hide spare cables so they're not all that useful.

Modular PSUs are also less efficient than captive cable PSUs.

they save space and therefore, improve airflow

braided modular psu's are a dream to work with.

it's just a shame the Hiper Type R psu's had such poor internals, the connection system is awesome on them

As said it depends on how much stuff you have in your system. With my old pc which had 3 optical drives and 6 hard drives, waterpump, fan controller, 8 fans, two graphics cards, a sound card I ended up connecting every modular lead anyway so nothing gained.
